For today’s blog we are back with another installment of book recipes! For this blog we are making a dinner inspired by the A Court of Thorns and Roses series. These recipes were taken from A Feast of Thorns and Roses: The Unofficial Cookbook of A Court of Thorns and Roses by Chelsea Cole. This blog is just for fun and is not a recipe blog. Today we are making a slow-roasted chicken, roasted root vegetables, and a drink called the Salty Nesta. To start off we heated the oven and got out our chicken, sage, garlic head , butter and lemon. We spatchcocked the chicken, which makes the chicken able to lay flat. We then seasoned with salt and pepper. We sliced up our lemon and mixed up the sage and butter. We then put lemons in and under the chicken, as well as spread out our sage butter. This is what our chicken looked like when it was oven ready:
While this was cooking, we got started on our root vegetables. We got out beets, turnips, onion, and garlic and chopped them up. Then we drizzled it with olive oil and seasoned it with some dried herbs, salt and pepper.
This then went in the oven after the chicken was finished. When the root vegetables were done we sprinkled a little bit of goat cheese on top. While that was in the oven we made a gravy for the chicken using garlic and the chicken drippings. Here is our meal getting ready to be eaten:
Before we could dive in we had to make our “Salty Nesta”. This drink was a combination of lemon juice, grapefruit soda and gin. We added some grapefruit slices for a garnish and served. Here is the final meal:
This was a super yummy meal and a lot of fun to make. It taught me some new skills like “spatchcocking” and stuffing a chicken. I am super excited to try out more recipes from this cookbook.
